After an easy snack, packed full of fresh veg? We’ve got you covered with these Chicken Rice Paper Rolls with a Peanut Hoisin Sauce!

This recipe was made in collaboration with our friend Melbourne Food Nerd!

Method

  1. Add chicken to cold water and bring to a boil. Cook for approximately 20 minutes or until cooked through 
  2. Grate the carrot into long strips. Add to a bowl with 1 cup of white vinegar and 1 tablespoon of sugar
  3. Add thinly sliced onions to a separate bowl with 1 cup of white vinegar and 1 tablespoon of sugar in a bowl
  4. Cut cucumber to desired size (thin slices work well)
  5. Crush peanuts
  6. Cook noodles according to packet instructions
  7. For the sauce add the hoisin sauce and peanut butter into a bowl, mix, and add water to thin out to your desired consistency
  8. Once the chicken has cooked and cooled, cut into strips 
  9. Fill a large bowl with warm water and one at a time, rotate the rice paper into the water (do not submerge for too long). Place wrapper on a board. 
  10. Place fillings onto one side of the rice paper, starting with the noodles, then chicken, vegetables in any order, a sprinkle of peanuts and end with the mint and coriander on top 
  11. Roll once from the side with the fillings and then fold the left and right edges in. Continue to roll firmly to form your rice paper rolls. 
  12. Continue rolling, one by one, until you’ve used all your fillings. Serve on a plate with peanut hoisin dipping sauce on the side.
  13. Enjoy!
