Refresh your breakfast repertoire this week with our Italian-inspired White Beans on Toast. 🫘

A tasty twist on your usual loaded toast with bursts of seasonal flavours from tomatoes, chillies and cannellini beans, this recipe can be easily adapted based on what you have on hand or specific dietary requirements.

Method

  1. Fry the onion, garlic & dried chillies in olive oil in a large pan. Fry for 5 minutes.
  2. Add rinsed canned cannellini beans, veggie stock, Italian herbs, baby tomatoes, olives and lemon juice increase the heat to high.
  3. After 5 minutes, turn down the heat and let simmer on low for 20 mins. Once the liquid evaporates, the beans should be saucy.
  4. Serve on toast with feta, fresh red chilli, and fresh basil on top!
