Ingredients
- 4 small Vietnamese rolls
- ½ cup (150g) Sriracha mayonnaise/plain mayonnaise
- 1 cup sliced cooked chicken
- 4 Qukes® baby cucumbers (thinly sliced lengthways)
- 1 carrot (shredded)
- 2 green shallots (cut into matchsticks)
- 1 long fresh red chilli (thinly sliced)
- Fresh coriander or mint (optional)
- LUNCH BOX EXTRAS
- Qukes® baby cucumbers
- Petite Tomato™
- Perfection Strawberries, Raspberries, Blueberries
- Crisp Delight™ watermelon
- Cheese cubes and crackers
- Hard-boiled eggs (peeled)
Method

Preheat oven to 200°C fan forced. Place the bread rolls on a baking tray. Bake for 5 minutes or until lightly crisp.

Cut the rolls, taking care not to cut right through. Spread the mayonnaise over both sides of the rolls. Fill the rolls with the chicken, Qukes®, carrot, shallots, chilli, and herbs. Place into a lunch box with lunch box extras.
